#284 Roasted vegetable pasta.

Got a new recipe for all 2 of y’all that read this silly blog: roasted vegetable pasta with garlic sauce. Mmmmmm… Tonight we had a big dinner with Jim and Mal next door: they grilled chicken and sausage and made salad, we brought this yummy new recipe I made up.
Ingredients:
3 small yellow squash
2 zucchini
1 yellow onion
1 red bell pepper
1 yellow bell pepper
1 package of chopped, clean mushrooms
1 pack of linguini
1 stick of light butter
3/4 cup of white wine
1.5 tablespoons of minced garlic
8 fresh chicken breast tenderloins
olive oil
garlic powder
onion powder
salt
pepper
Italian dressing
parmesan cheese (the grated canned kind)
Preheat the broiler to 500 degrees. Wash and chop up all the veggies (not garlic), then toss them with a little olive oil, generous amounts of salt, garlic powder and onion powder. Spread veggies evenly across a cookie sheet and broil until the edges of the veggies start turning black and yummy. Remove from the oven. Heat a little olive oil in a skillet on medium high heat and add the chicken tenders. Salt, pepper and add some Italian dressing to the chicken. Cook until done, cut into small pieces then set aside. In the same skillet (don’t clean it!), put the heat on low and let cool for a minute. Add the stick of butter, wine and garlic. Let simmer until the wine doesn’t smell so strong. Boil water and add the linguine, strain. Add the chicken and veggies to the garlic sauce skillet, stir and coat everything in the sauce. Pour over pasta, sprinkle generously with parmesan and serve with salad and garlic bread. It’s rich. It’s delish. Mmmmm…
